Adamas Caviar® is a unique product thanks mainly to the water where our sturgeons are born and raised. The quality of the water is to aquaculture and caviar as the 'terroir' is to vineyards and wine. Those who have a favourable starting position are facilitated to obtain a high-quality finished product. Adamas is the brand name of the caviar produced by Salmo Pan srl, located in Italy in the heart of the Tormo River Natural Park.

The company
Our supply chain allows us to have full control over the quality of the final product. The vertical integration of our company begins with the reproduction of the sturgeon. The eggs are hatched in special incubators, the larvae are then weaned and moved on to the nursery. The growth and fattening takes several years depending on the species.

Full respect of CITES regulations for Sturgeon protection and of eco-friendly caviar production are the primary goals of ADAMAS CAVIAR. The 1973 Washington Convention on International Trade in Endangered Species of Wild Fauna and Flora, more commonly known as CITES (Convention on International Trade of Endangered Species), aims to protect endangered plants and animals by regulating and monitoring their international trade.
